Black Bean, Barley and Vegetable Chili

Whats a girl to do when she plans to make chili for dinner but gets home only to find that her cupboards are completely empty of canned kidney beans? Improvise, of course. And the results were pretty spectacular, so here they are!

Black Bean, Barley and Vegetable Chili:

-1 28oz can diced tomatoes
-1 16oz can tomato sauce
-2 tblsp tomato paste
-1 can black beans, rinsed well
-1/4 cup pearl barley
-1/2 cup frozen sweet corn
-1 large onion, diced
-1/2 cup sliced carrots
-1/2 cup sliced celery
-1 bell pepper, diced
-1 clove garlic, minced finely
-3 tblsp chili powder
-1 1/2 tblsp cumin
-1 tblsp dried parsley
-1/2 tsp salt
-black pepper to taste
sliced green onions and shredded cheddar cheese to garnish

-put everything in a stockpot
-simmer for about 45 minutes
(chili is pretty easy.)
